I took Aubree to the Dr yesterday because her flare-up wasn't getting better it seemed to be getting worse. Her flare-up was from her getting a hold of pizza about 2 weeks ago. So we were thinking she is probably developing a Soy allergy too. We put her on Rice milk and vitamins. So this morning while getting everyone breakfast, Justin happened to glance at the cereal before giving it to Aubree and noticed it contained milk! UGH! I swear we have checked that label several times, so now we are confused if we bought the wrong brand or what. I had been giving her the Cinnimon Toasters almost every day! It was her favorite, she would ask for it (at 13 months thats a big deal). This is what happens when I try to rush through the grocery store with 3 grumpy kids and dont check every label, just trusting that they kept the formulation the same. I did the same thing with the Grandma Sycamore's bread. Guess from now on I need to go grocery shopping with another person or find a sitter so I can have the time to check every label in the store! :-/</p> <p>On the brighter side, at least I don't have to take soy out of her/our diet. If I hod to do that, there would be almost nothing I could buy for quick dinners. I would have to make everything from complete scratch! So you may want to cut the qualities down. <br />Start by boiling 3-4 chicken breasts for 20 min. While that's going add about 1-2 tablespoons of olive oil in the bottom of your soup pot. Chop and add about 2 cups each onion, celery, and carrots. Add 1 clove minced garlic to your oil and add the veggies. Cook till tender. Then add 4 cups of water and 4 cans Kroger brand chicken broth (most other brands contain dairy so check yours). Bring to a boil and cook your noodles in the soup. I prefer egg noodles but any will work. Shred your chicken when it's done and add it to the soup. Then salt and pepper to taste and a dash of Ginger not only for flavor but it's really good to help anyone not feeling well to get better! However, she learned that she can step up one the chair's leg supports and get access to the contents of whatever is on the table. SO in just a few seconds (thats all it ever takes) she and our puppy ate some pizza! So between this, colds, date night, and a birthday dinner, i haven't been cooking. Stir occasionaly until it starts to brown. then remove from pan and set aside.</p> <p>While Kielbasa is cooking chop remaining veggies into bite sized pieces and mince garlic. After Kielbasa is removed from pan, add garlic, onions, carrots, celery, salt, pepper and soy sauce. Stir every min or two. Then after several min of cooking add the broccali and bok choy. Cook to desired tenderness, then add the kielbasa back into the pan and serve!</p> <p>This is great by as is or over rice! Feel free to add your own favorite stir-fry veggies and make it your own! I prefer to use the light Kielbasa so the meal doesnt sit heavy afterwards. Sadly I lost all of mine during one of our many moves. I picked up the Pillsbury Cassic Cookbook #344 Thanksgiving. They are the ones by the checkout lanes with all the magazines. Anyway, it has GREAT ideas in it. All the classic thanksgiving side dishes I grew up with are heavy on the dairy, though yummy, I want to have side dishes for my kids to grow up on that they ALL can eat. I don't want a holiday to make Aubree feel left out. Holidays are about bring a family closer not making one child feel left out. So I tried this one recipie and it was a huge hit! With the adults and kids! I just added some squash and zuccani from my garden and subbed extra virgin olive oil for the butter! I have scanned and attached the recipie.</div><div></div><div>Also pictured is the Chimmichangas I made. I use Nalley Brand original chilli. I start by putting a little olive oil in a pan and saute up some garlic, celery and onion. Then I add the chilli, some corn, a dash of salt and celery salt and some Sweet Baby Ray's Brand BBQ sauce. While this is going get a pan of vegitable oil heating up about 1/2 inch deep. Heat up Mission brand tortillas in the micorwave about 30 sec. for 3 at a time. Then place the chilli mix in the middle of the tortilla and fold two sides in then the other two so the chilli is all contained in the center. Once the oil is hot enough place the folded side down and cook till golden brown, then flip over and cook the top side till golden brown. Remove from pan and place on paper towels to drain. Bake for 15-18 min. They are done when the sides and bottom start turning gloden brown. Place on cookies on cooling racks till cooled. What I do is bake 1 pan with the above recipe and then bake the rest of them with semi-sweet chocolate chips. That way my daughter gets her cookies dairy free and i get my chocolate fix! I used Duncan Hines brand Swiss chocolate flavor and subbed 1/4 cup applesauce per egg. For frosting I used 1lb powdered sugar, 1/4 teaspoon salt, 1/4 cup soy milk, 1 teaspoon vanilla and 1/3 cup of butter flavored crisco. You beat with mixer till smooth and creamy scraping the bowl often. I am a mom of 3 little girls the youngest of whom has a severe milk protein allergy. When this was discovered it felt like "my cooking world" had been turned upsidedown! Everything I grew up on, loved, and cooked seemed to contain dairy! I searched the web in my down time for weeks on end trying to find dairy-free recipies that were kid friendly, budget friendly, easy to prep, ect. We also have to be careful about eggs too because she seems to have a reaction if there are to many also. So after the coaching of friends I have decided to create a blog to share recipies with other moms in the same boat, for free! </span><br />
